Gingery Sweet Potato Pie
INGREDIENTS
- 2 lb. small sweet potatoes (about 4)
- all-purpose flour, for work surface
- 1 all-purpose piecrust
- 3/4 c. whole milk
- 3 large eggs
- 2 tsp. grated fresh ginger
- 1/2 c. packed light brown sugar
- 1/2 c. granulated sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground allspice
- 1/4 tsp. kosher salt
- 2/3 c. sour cream
- 1/2 c. heavy cream
- 2 tbsp. confectioners' sugar
- 1/2 tsp. pure vanila extract
